This recipe for a healthy version of chocolate chip cookies is from Laurie?Jacobson of Boswell.
Healthy Chocolate?Chip Cookies
2 cups whole wheat pastry or spelt flour
1/2 cup rolled oats
1/2 teaspoon sea salt
1 1/2 teaspoons baking powder
2/3 - 1 cup chocolate chips
1/2 cup pure maple syrup
1/2 cup canola oil
1 teaspoon pure vanilla extract
1 tablespoon water (if needed)
Preheat oven to 350 degrees Fahrenheit
In a medium bowl, combine flour, oats, salt and baking powder. Add chocolate chips and mix well.
Make a well in the center of the bowl. In it, combine maple syrup, oil and vanilla. Whisk together, then blend with dry ingredients. Add water if needed to make cookie dough consistency.
Drop by tablespoon onto lightly greased cookie sheet or cookie sheet lined with parchment paper. Flatten cookies slightly with back of fork.
Bake 12 to 15 minutes until golden brown. Cool on racks and enjoy a healthful treat!
