Adventures in Eating

Sometimes it's best to be brief. This is one of those times. In the past 10 days I've tried several new recipes in hopes of branching in new directions with what we're eating. Here's the lowdown:

1. Pudding made with avocado. Yep. You mix coconut milk, cocoa powder, avocado, and the sweetener of your choice. Why did I make it? I had the ingredients on hand. Some (avocados, coconut milk) were about to be unusable. "Why not?" I thought. Now I know. Yuck. Just yuck. Oh, yeah. I don't really like pudding in the first place anyway, but still. Yuck.

2. Noodles made out of zucchini! You've seen the spiralizing trend (not like the perms in the 80's)? I took zucchini, made it into thin fine "zoodles" and blanched it in boiling water for 50 seconds. Then I sauteed it briefly in olive oil and garlic and added a little ricotta cheese and parmesan. Yum. Just yum!

3. Mashed cauliflower. We've covered my overarching love of the simple mashed potato, yes? It's ridiculous how I love them. But, I had cauliflower and no potatoes. Plus I had some of that coconut milk from that dreadful pudding failure. So I cooked the cauliflower until super soft, dumped it into my food processor with coconut milk and some chives and butter. Oh goodness, major yum.
