I can't wait for others to try it because I did this for Eve and we had a ridiculously good time. I'm still not sure which was better, making the recipe or the fact that we've been running around shouting "cake in a cup!" like lunatics, for days now.
Herewith is a thrilling little recipe for a crumbly topped coffee cake, that you can make in minutes. You bake it in a coffee cup in your microwave. We liked it just this way but the recipe itself leaves room for tweaking to your personal likeness. Oh, I cannot wait for you to tell me how it turns out!
Here's how:
Pick yourself a coffee cup that you can microwave and soften, but don't melt a tablespoon of butter in it.
Add 2 Tbsp of sugar and stir until its fluffy.
In a separate dish, crack and lightly beat an egg. Depending on your desire for eggness, add half to all of your beaten egg into your mixture.
Stir in 2 tbsp of sour cream and a few tiny droplets of vanilla. Don't go overboard with the vanilla.
Stir.
Add 1/4 cup of flour and 1/8 tsp of baking powder.
For the all-important crumbly topping, in a separate little dish add 1 tbsp butter 2 tbsp flour 1 tbsp brown sugar 1 tsp cinnamon
Crumble it together with your hands.
Now add the crumble topping mixture to the cup. I'll confess, I stirred a little into the mix and added some on top. Also, you may want to adjust the amount of topping to the size of your cup. We used a medium sized cup and it made a LOT of topping.
Now, put it into the microwave and cook for 1 minute. At the end of 1 minute cook, in 10 second intervals until done to your liking. Mine needed a minute and 20 seconds.
When you take the cup out it will be super hot ( like me, ha!) so let it cool a bit then get a spoon or fork and enjoy your cup full of crumb and yum.
