| | Berries for BreakfastJuly 2, 2012 - Jen ZboznyDo you need a little change from your usual breakfast fare? This tasty berry crumble recipe is sure to please and is perfect for summer berries. Ingredients for the Crumble Topping: 1/2 cup all-purpose flour 1/2 cup light brown sugar (you can reduce to taste) 1/4 cup granulated sugar (again, you can reduce to taste) 1/2 teaspoon ground cinnamon 1 pinch salt 1/2 cup oats 6 tablespoons cold butter, cut into small pieces Ingredients for the Berry Mixture 4 cups mixed berries 1/2 cup granulated sugar (again, you can reduce to taste) 2 tablespoons cornstarch Directions Preheat oven to 350 degrees. In a large bowl combine ingredients for the crumble topping. Using a pastry blender, a fork or your hands cut in butter. Keep cold until ready to use. In a separate large bowl combine the ingredients for the berry mixture, tossing gently to coat the berries. Spread the fruit mixture between into a 9 X 11 pan. Top with the crumble topping. Bake until top is golden and fruit is bubbly, about 35 minutes. Serve warm (but you can snack on it all day if you're me). Enjoy! I'd love to hear your reviews on this one.
