Berries for Breakfast

Do you need a little change from your usual breakfast fare? This tasty berry crumble recipe is sure to please and is perfect for summer berries.

Ingredients for the Crumble Topping:

1/2 cup all-purpose flour 1/2 cup light brown sugar (you can reduce to taste) 1/4 cup granulated sugar (again, you can reduce to taste) 1/2 teaspoon ground cinnamon 1 pinch salt 1/2 cup oats 6 tablespoons cold butter, cut into small pieces

Ingredients for the Berry Mixture

4 cups mixed berries 1/2 cup granulated sugar (again, you can reduce to taste) 2 tablespoons cornstarch

Directions

Preheat oven to 350 degrees.

In a large bowl combine ingredients for the crumble topping. Using a pastry blender, a fork or your hands cut in butter. Keep cold until ready to use. In a separate large bowl combine the ingredients for the berry mixture, tossing gently to coat the berries. Spread the fruit mixture between into a 9 X 11 pan. Top with the crumble topping. Bake until top is golden and fruit is bubbly, about 35 minutes. Serve warm (but you can snack on it all day if you're me).
