Stories of a Stay-at-Home Mom

Date night at home

With two kids, it's  hard to find time to spend just with Scott. It often seems like we're shuffling the kids between us trying to run errands, work out or get stuff done. We spend plenty of quality time with the kids and we are always going on little family trips or picnics. But, rarely do just the two of us spend time together. Once the kids are in bed, I'm usually too tired to stay up and talk or play games like we used to do. And, Scott usually wants to watch a sporting event or play his NFL video game (which drives me crazy, but that's for another blog.) Once and a while we'll get a babysitter and go out, but those times are few and far between, and that hasn't happened since Johnny was born. So, tonight I planned a special little dinner at home for us. Julie has been in Buffalo all week with my parents visiting family, and Scott has off work tomorrow for the July 4th holiday, so tonight is perfect. I even sent him a little evite for the dinner. My plan is to do fondue, which he loves. We cut up meat, shrimp and veggies, cook them in the fondue pot and dunk them in delicious dipping sauces. Tonight I'm even going to make a cheese fondue to start out. So, I'll give you the recipe for my Southwest Salsa Fondue. (Scott's also a big fan of spicy food, so I think he'll like it.) If you don't have a fondue pot, I think you can just cook it over the stove, but make sure you keep stirring.

Southwest Salsa Fondue

3/4 cup prepared salsa, 3/4 pound shredded cheddar cheese, 3/4 pound shredded Monterey Jack cheese, 3 tablespoons cornstarch, 1/2 teaspoon ground cumin, 1 garlic clove, 2 12-oz bottles of Corona, 3 tablespoons of Tequila

Place the salsa in a strainer and drank for an hour. Reserve. Place the cheeses in a large bowl and sprinkle with cornstarch. Toss the cheese with cornstarch. Rub the fondue pot with garlic. Add 2 1/4 cups of beer and heat, until boiling. Lower heat and gradually add the cheeses, whisking while adding the chees. Stir the cheese and allow it to melt before adding more. When the cheese is melted, stir in the salsa and Tequila.
